New Orleans native Deegan McClung, alum of Commander’s Palace, Herbsaint and Uchi, has spun his culinary ingenuity into superb new dishes, including a fresh take on Jeffrey’s signature Crispy Oysters. Deegan is taking Jeffrey’s into new culinary territory on par with major dining spots around the country. His creative development in some of New Orleans’ most renowned restaurants and at Austin’s celebrated Uchi is reflected in new, high impact dishes that integrate influences from classic French, Creole, Southern and Asian cuisines. The 32-year-old McClung made his Austin debut at Wink, where he began his devotion to local ingredients and built relationships with area farmers and purveyors, then was wooed away by Tyson Cole to Uchi. After a post-Katrina return to New Orleans, McClung came back to Austin to help revamp Cissi’s Market in SoCo and develop it’s acclaimed wine bar. |
